Topics include lab operating procedures, orientation, ongoing management, recipe management, lab work assessment, and curriculum. Attendees will learn time management strategies for improving work-life balance while working as a culinary teacher. Attendees will gain confidence in leading culinary lab experiences. Global Cuisine: The Amazing Trek -Glenda Seward, Mid-Prairie High School Looking for ideas to incorporate international cuisine into your curriculum? This session provides lesson plan details, recipes, tips, and strategies for promoting greater appreciation and understanding of international cultures and global cuisine. Student teams engage in an immersive game structure to trek to various world regions where they learn about the culture, cuisine, and cooking techniques unique to each region we visit and compete to earn 'miles' with presentations and food sampling for a team of judges. The ideas and plans from this session can be adapted for use, whether you are teaching a unit or a full course. Attendees will learn effective strategies for teaching units and courses in global cuisine, international foods. Attendees will leave with access to lesson plans and teaching materials to adapt for their classrooms to teach this content.
